This simple dessert, with just 6 ingredients, has a natural sweetness and is deliciously thick and creamy.
Chocolate Chia Seed Pudding Recipe
Total time: 15 minutes
- 1 1/2 cups unsweetened almond milk
- 1/3 cup chia seeds
- ¼ cup cocoa or unsweetened cocoa powder
- 3-5 tbsp. maple syrup
- 1/4 tsp. sea salt
- 1/2 tsp vanilla extract (optional)
Add all the ingredients, except the sweetener, to a bowl and mix well until mixed. If you do not use a mixer, add the maple syrup at this stage.
Leave the mixture in the refrigerator overnight or at least 5 hours (until it acquires a pudding texture).

If using the mixer, put the mixture in the blender and beat until it becomes fluffy and completely creamy.
Serve cold with chopped fruit, granola, or whipped coconut milk.
It can be kept in the refrigerator for 2-3 days, however, it is better when consumed fresh.
